  • 1 piece trimmed boneless leg of lamb, cubed
  • 1 C. marinade of your choice
  • 5 large jalapeño peppers, cut into pieces
  • 8 skewers

Combine the lamb and 1 cup of a marinade of your choice. Marinate in the fridge for at least 4 hours. Cook the peppers in a saucepan of boiling water for 30 seconds and drain. Marinate the peppers in another bag for at least 4 hours. Drain the lamb and peppers and place them on skewers, alternating. Cover the ends of the skewers with foil. Grill the kebabs on a grill rack over high while turning. Cook for 12 minutes and remove. Serve alongside crisp vegetables and extra marinade.
