Lamb Koftas

In this delicious recipe, a mixture of lamb, spices, and a red chili is pressed onto skewers and grilled.

  • 1 C. lamb, minced
  • 1 tsp. cumin
  • 1 tsp. ground coriander
  • 1 Tbs. coriander leaves, chopped
  • juice of 1 lime
  • 1 red chili, chopped
  • 1 Tbs. gram flour (you can use all-purpose if you can't find gram)
  • salt and freshly ground pepper

In a mixing bowl, mix together the lamb, cumin, ground coriander, chopped coriander, lime juice, chili and gram flour. Mix together well and season with salt and freshly ground pepper. Divide the lamb mixture into 4 even portions and wrap each portion around a skewer, pressing the meat onto the skewer. Preheat the grill then grill the lamb skewers until cooked through and browned on both sides. Serve at once.
