Three cheese lasagna rolled noodles baked in Alfredo sauce and topped with shrimp scampi.

  • 1 pkg. lasagna noodles
  • 4 C. ricotta cheese
  • 2 C. shredded mozzarella cheese
  • 3/4 C. grated Parmesan cheese
  • 2 C. finely chopped fresh spinach
  • 2 eggs
  • 1 Tbs. chopped parsley
  • 3/4 tsp. dried oregano leaves
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 3 C. Alfredo

Heat oven to 375 degrees. Cook pasta according to package directions. Meanwhile, in a large bowl, stir together cheeses, eggs, spinach, parsley, oregano, salt, and pepper. In a 13x9x2-inch baking dish, spread 1/2 cup of Alfredo sauce on bottom of baking dish. Roll 2 tablespoons full of mixture onto lasagna noodle and roll. Place each rolled lasagna noodle at the bottom of the baking dish until full. Then place 1/2 of the remaining sauce on top of the noodles. Place another layer of noodles on top and cover with remaining sauce. Sprinkle with additional Parmesan cheese if desired. Cover with aluminum foil and bake for 30-35 minutes or until hot and bubbly. Uncover and let brown. Place noodle in plate and surround with desired sauce and meat.Top with baked chicken breasts or shrimp scampi and serve.
