Layered Cheesecake

This yummy cheesecake has a graham cracker crust and a delicious top layer!

  • Crust:
  • 1 1/3 C. graham cracker crumbs
  • 1/4 C. melted butter
  • Cake:
  • 9 oz. cream cheese
  • 2 eggs (beaten)
  • 1/2 C. sugar
  • 1/2 tsp. vanilla
  • 1 pt. sour cream
  • 5 Tbs. sugar
  • 1/8 tsp. cinnamon

Combine butter and graham cracker crumbs and press them into a 9" pie pan to form a crust.  Bake at 350 degrees for 5 minutes.

Make sure cream cheese and eggs are at room temperature.  Cream cheese well with a beater.  Gradually beat in sugar, then add eggs and vanilla.  Beat well.  Pour into crust and bake at 325 degrees for 20 minutes or until firm. 

Mix sour cream, sugar, and cinnamon.  Spread on cooled first layer.  Return to oven and bake for 5 minutes.  Cool and chill well.  Serve plain or with strawberries.
