  • 1 single pie crust, unbaked
  • Brownie:
  • 1/2 C. butter
  • 3 1/2 oz. dark chocolate, chopped
  • 1/4 C. unsweetened cocoa powder
  • 3/4 C. sugar
  • 2 eggs
  • 1 Tbs. vanilla extract
  • 2 Tbs. sou cream
  • 1/4 C. flour
  • 1/2 tsp. salt
  • Coconut Banana:
  • 1/3 C. sugar
  • 1 egg
  • 6 oz. unsweetened coconut milk
  • 1 medium banana, mashed
  • 3 Tbs. flour

Preheat the oven to 350 degrees.

To make the brownie layer, combine the butter and chocolate in a saucepan and melt. Set aside. In a bowl, whisk the eggs and sugar. Pour the chocolate mixture into the egg and sugar mixture. Mix in the vanilla, sour cream, flour and salt. Set aside.

Combine all the ingredients for the coconut banana mixture together and pour it into the pie crust. Top with the brownie layer.

Bake for 35 to 50 minutes, or until the center has set and just barely jiggles. Cool to room temperature before serving.
