Layered Macaroni & Double Cheese

When I was about 8 years old, all I wanted to eat was macaroni and cheese, so my mom started getting creative with her mac and cheese recipes. This layered macaroni and double cheese recipe is still one of my favorites to this day.

  • 1 pkg. macaroni & cheese
  • 1 1/2 C. shredded sharp cheddar cheese
  • 1 (12 oz.) pkg. creamed cottage cheese
  • 1/4 C. butter
  • 1/4 C. all-purpose flour
  • 2 C. milk
  • 1/8 tsp. white pepper
  • salt
  • 1/2 C. soft bread crumbs
  • 2 Tbs. melted butter

Cook macaroni according to package directions. Drain in greased 2-quart baking dish. Alternate layers of macaroni, cheddar cheese, and cottage cheese, starting with macaroni. Melt the 1/4 cup butter in a saucepan and stir in flour to make it smooth. Blend in milk gradually. Heat to boiling, stirring constantly. Cook until thick. Add salt and pepper. Pour sauce over macaroni and cheese. Mix bread crumbs with melted butter and sprinkle on top. Bake at 375 degrees for 30-35 minutes.
