  • Cake:
  • 3 C. flour
  • 1 tsp. baking soda
  • 2 C. sugar
  • 1 C. canola oil
  • 1 tsp. distilled white vinegar
  • 2 T. cocoa powder
  • ½ tsp. salt
  • 4 eggs, beaten
  • ½ T. vanilla extract
  • 1 C. buttermilk
  • ½ C. unsalted butter, softened
  • Red food coloring
  • Cream Cheese Frosting:
  • 3 T. milk
  • 2 tsp. vanilla extract
  • 16 oz. cream cheese, softened
  • ½ C. unsalted butter
  • 4 C. sugar

Preheat the oven to 350 degrees. Lightly butter two cake pans. Set them aside. For the cake add all of the cake ingredients into an electric mixer. Let is mix until the mixture is smooth. Pour the batter into the prepared cake pans about 2/3 of the way full. Bake for 30 minutes. Meanwhile, prepare the frosting. In a large bowl, beat the cream cheese and butter in stand mixer. Add in the remaining ingredients and stir. Remove the cake pans from the oven. Let them cool for 5-10 minutes. Place one cake onto a cake platter. Spread the frosting on top of the this cake. Place the other cake on top of the frosted cake. Spread the remaining frosting over the entire cake. Serve and enjoy.
