Ingredients

  • Cake:
  • 1 box white cake mix
  • 3 egg whites
  • 1/3 cup oil
  • 1 1/3 cup water
  • 2 teaspoons instant coffee crystals
  • 1/2 cup coffee
  • 3 tablespoons Kahlua
  • Filling:
  • 8 ounces Mascarpone cheese
  • 1/2 cup powdered sugar
  • 2 tablespoons Kahlua
  • Frosting:
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons Kahlua

Directions

Preheat oven to 350 degrees, and grease three round nine inch pans.


Prepare cake mix as directed on box.


Split 2/3 of mix and pour into two pans.


Add coffee granules into rest of batter and place in last pan.


Bake 20 to 25 minutes and cool ten minutes.


In measuring cup, mix brewed coffee and three tablespoons Kahlua. Set aside.


For filling, mix Mascarpone cheese, 1/2 cup powdered sugar, and two tablespoons Kahlua on low speed until smooth.


Cover and refrigerate.


For frosting, use medium bowl and electric mixer to beat cream cheese, 1/4 cup powdered sugar, and two tablespoons Kahlua.


Fold 1/2 cup cream mix into filling mix.


Assemble cake by placing one plain cake layer on a dish.  Holes are poked one inch apart into this cake.


Spoon 1/3 of reserved coffee mix over the cake and spread half of the filling mix on top.


Top with coffee flavored cake layer and pole similar holes in the cake.


Spoon 1/3 of coffee mix over this layer and spread with remaining filling.


Top with third cake layer and poke holes.


Spoon rest of coffee mix on top.


Spread frosting on top and sides of cake.


Dust with cocoa and garnish with loose chocolate.


Chill at least 30 minutes before serving.
