Lazy Day Pigs in a Blanket Casserole

This recipe was given to me by my mother. It has the same taste as the pigs in the blanket without all the trouble of cooking the cabbage and rolling the pigs in the cabbage leaves. I bake it, or sometimes I put it in my slow cooker and cook it slowly for several hours.

Ingredients

  • 2 lb. hamburger
  • 1 small onion, chopped
  • 1/2 green pepper, chopped
  • 1 stalk celery, chopped
  • Salt and pepper to taste
  • Sliced bacon
  • Sauce:
  • 2 C. tomato soup
  • 1 qt. tomato juice or V-8
  • 1 Tbs. vinegar
  • 2 tsp. garlic
  • Shredded or chopped cabbage
  • Sliced potatoes (optional)

Directions

Saute 2 lb. hamburger, chopped onion, chopped green pepper, and celery. Add salt and pepper.

Mix all sauce ingredients in seperate dish. In a buttered cassarole dish, layer 1/2 cabbage, 1/2 ground meat mixture, sliced potatoes(optional) and 1/2 sauce. Repeat layer. Top with sliced bacon. Cover and bake 350 degreeĀ oven forĀ 1 1/2-2 hours.
