Lazy Lentil Soup

This soup is so comforting. You can make a big pot and serve to guests. Add meat and make it a meal.

Ingredients

  • 1 pkg. lentils, any color, rinsed and checked for rocks
  • 1/4 C. shredded carrots
  • 1/2 small onion, minced
  • 1 can chicken or vegetable broth
  • Beef bones
  • 4 C. water
  • 3-4 grinds black pepper
  • Pinch salt
  • 3 Tbs. cooked pastina or other small pasta (optional) (use whole wheat for more nutrition)
  • Frozen spinach, thawed (optional)
  • Grated cheese

Directions

After rinsing lentils, place 3/4 of the batch in a 4 quart stock pot. Add water, carrots, onions, bones, salt and pepper. Bring to boil and then lower to medium and simmer about 30 minutes, stirring often. Add remaining lentils and broth. If using beef cubes, sauté quicky in 2 Tbs. oil until golden. Add to soup. After liquids reduce a bit more, taste for salt and pepper and adjust. Continuing to cook another 30 minutes or until lentils are tender. Remove bones. Add spinach and pasta and simmer til heated through. Serve sprinkled with grated cheese.
