  • 1 T. olive oil
  • 2 cloves garlic, minced
  • 1 onion, diced
  • ½ C. celery, chopped
  • ½ C. carrots, chopped
  • 1 ½ C. water
  • 1 (15 oz.) can great Northern beans
  • 1 C. chicken broth
  • ¾ C. Italian stewed tomatoes
  • 2 potatoes, peeled and cubed
  • 2 C. cooked chicken, chopped
  • Salt and pepper to taste
  • Fresh basil for garnish

In a large pot, heat oil and sauté garlic and onion until fragrant. Add in celery and carrots; sauté until tender. Add your remaining ingredients (except for the basil), stir, and bring to a boil. Reduce heat and simmer for 15 to 20 minutes until hot throughout. Stir in basil and serve.
