There is no better way to enjoy spinach than with these lean green spinach wraps. These sandwiches are light, healthy, and delicious. They are also made with rice, corn, and tomatoes, which all provide additional texture and flavor.

  • 1 1/2 C. white rice
  • 3 C. water
  • 1 tbsp. fresh cilantro
  • 1/4 C. lime juice
  • 2 C. frozen corn
  • spinach
  • 1-2 tomatoes, chopped
  • 4 spinach tortillas

Take out a medium saucepan and add the rice and water. Bring the rice to a boil and then lower the heat and let it simmer for 10 minutes, which is how long it should take for the rice to become tender. Add the cilantro and lime juice and thoroughly combine all of the ingredients. When the rice is cooking, defrost the frozen corn. Prepare each wrap by placing the ingredients in the spinach tortillas in this order: spinach, rice, tomatoes, and corn. Form the tortillas into sandwich wraps and then slice in half. Serve.
