  • 3 cloves garlic
  • 1 chopped onion
  • 4 chopped carrots
  • 4 chopped celery stalks
  • 3 T. olive oil
  • 2 C. lentils
  • 1 T. cumin
  • 2 qt. vegetable broth
  • 1 bay leaf
  • 1 sprig thyme
  • salt and pepper

In a large pot, begin to heat the garlic cloves with the olive oil. Add the onion, carrots, and celery and saute until they are tender. Add the lentils and cumin, making sure the lentils are coated in oil. Pour in the broth, add the bay leaf and thyme, then simmer for 30 minutes. Take out the bay leaf and thyme, then salt and pepper to taste.
