An Italian rustic grape cake is best when eaten warm. This is what I call a perfect weekend brunch cake.

  • 5 T. powder sugar
  • 175 mL. extra-virgin olive oil
  • 225 mL. dessert white port wine
  • 3 eggs
  • 1 lemon zest
  • 1 orange zest
  • 225 g. flour, plus 1 tbsp for dusting
  • 1 tsp. baking powder
  • 175 g. halved grapes
  • 100 g. softened butter

Preheat your oven to 350 degrees. Empty the wine into a pan. Bring it to a boil and keep it bubbling for 5 to 10 minutes. Let it sit until it is cooled. Blend the sugar and butter together in a medium bowl. Add the eggs and stir in the zests. Mix the baking powder and flour into the bowl. Add the cooled wine, olive oil and pour some into the mix. Keep alternating between adding the mixture and the extra flour. This makes the mixture consistent. When ready pour the mixture into a buttered baking dish. Sprinkle the chopped grapes and powdered sugar over the mixture. I like to add almonds for a little crunch. Let it bake for an hour. Serve and enjoy.
