  • 4 tsp. corn flour
  • 4 T. soy sauce
  • 2 T. sugar
  • 4 blocks medium egg noodles
  • 2 T. sunflower oil
  • 1 large red pepper, chopped
  • 1 large orange pepper, chopped
  • 4 garlic cloves, minced
  • 8 green onions, sliced
  • 4 C. leftover roasted chicken, shredded
  • 1 tsp. chili powder

In a small bowl, mix together corn flour, soy sauce, and sugar. Add water until mixture is smooth and set aside. In a large pot, cook noodles in boiling water for four minutes. In a wok or a large skillet, heat oil. Add peppers, garlic, and green onion. Stir-fry for three minutes. Add chicken, chili powder, and corn flour mixture. Stir until thick. Drain noodles and combine with stir-fry mixture. Spoon into bowls and serve.
