This recipe is a perfect way to use all of the leftover ham you have from your holiday party! Whether it's Thanksgiving, Christmas, New Years, or Easter, this recipe makes a great brunch dish to serve the following morning!

  • 1 lb. leftover cooked ham, cubed
  • 4 potatoes, par-boiled and cubed (you can leave the skin on)
  • 3 ribs celery, chopped
  • 1 med. onion, chopped
  • 1 4 oz. jar pickled jalapenos (optional)
  • salt and pepper, to taste
  • shredded cheese, for garnish

Saute the partly cooked potatoes, celery, and onion in a medium skillet until the onions become transluscent. Then, add the ham and continue to cook until hot. Just prior to removing from the heat, add the jalapenos if desired. Serve with a sprinkling of shredded cheese.
