Ingredients

  • 1 lb. leftover cooked ham, cubed
  • 4 potatoes, par-boiled and cubed (you can leave the skin on)
  • 3 ribs celery, chopped
  • 1 med. onion, chopped
  • 1 4 oz. jar pickled jalapenos (optional)
  • salt and pepper, to taste
  • shredded cheese, for garnish

Directions

Saute the partly cooked potatoes, celery, and onion in a medium skillet until the onions become transluscent. Then, add the ham and continue to cook until hot. Just prior to removing from the heat, add the jalapenos if desired. Serve with a sprinkling of shredded cheese.
