Lemon and Garlic Shrimp Cocktail

- 1 lb. jumbo shrimp, peeled and de-veined
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- salt and pepper, to taste
- storebought cocktail sauce
- 1 tsp. wasabi
- 1/2 Tbs. soy sauce
- olive oil
Heat olive oil in a large skillet over medium-low heat. Place the garlic into the oil to infuse the flavor. Allow the garlic to soften for about 5 minutes. Do not burn the garlic, so lower the heat if you have to.
In a bowl, toss the shrimp with the lemon juice and zest. Allow to sit while the garlic browns. Add salt and pepper as desired. Drain excess juice off of the shrimp.
Raise the heat of the oil once the garlic has softened and saute shrimp for 3-4 minutes or until cooked through. Remove from the heat and place into a bowl.
In a small bowl, whisk the cocktail sauce, wasabi, and soy sauce. Serve with the shrimp.
