Lemon Bars

This is an extremely quick and easy recipe that will have dessert on the table in less than 30 minutes.

Ingredients

  • 1 pkg. 1-step angel food cake mix
  • 1 can lemon pie filling

Directions

Mix together the cake mix and the pie filling. Pour into either a greased 9 x 13 inch cake pan or a jelly roll pan with sides. Bake at 350 degrees until top is very lightly browned and bars spring back to the touch (about 30 minutes). Cool and sprinkle with powered sugar. Cut and serve.

Note: only the 1-step angel food cake mix works in this recipe.

  • I just tried to make t hese bars for a church luncheon. I figure most jelly roll pans are dark metal so the temperature probably should be lowered to at least 325?. The recipe says to cook 30 minutes and by 19 minutes, the bars were already way too brown on the bottom. I don't think I can salvage them and will probably have to throw the whole batch in the trash, which is not good at the cost of the cake mix and lemon pie filling.
