Lemon-Basil Couscous

With protein-rich chickpeas, this flavorful couscous is a meal on its own.

  • 1 package (10 oz.) couscous
  • 1 can (15 oz.) garbanzo beans (chick peas), drained and rinsed
  • 1/4 C. chopped fresh basil
  • 1/2 of a medium-sized red onion, chopped
  • 1 medium-sized tomato, chopped
  • 1/2 C. lemon juice
  • 1-1/2 tsp. salt
  • 1/2 tsp. black pepper

Prepare the couscous according to the package directions. Place the couscous in a large bowl to cool. Add the remaining ingredients and toss until well combined. Cover and chill for at least 1 hour before serving.

12 to 16 servings.
