  • 1 cup flour
  • ½ cup butter
  • 1 cup milk
  • 2 ½ cups blueberries
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 cup granulated sugar
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 11/2 teaspoon baking powder
  • 1 pint vanilla ice cream

Preheat the oven to 350 degrees F and melt the butter in the skillet as the oven preheats. In a bowl, mix the flour, baking powder, and salt before stirring in the milk, lemon juice, vanilla, lemon zest and 1 cup sugar. In a separate bowl, mix the remaining sugar and blueberries. Pour the batter into the skillet and add the sugary blueberries over the batter. Bake for 30 minutes. Allow the cobbler to cool and then serve with ice cream.
