Lemon-Blueberry Muffins

These fluffy muffins will really get you moving in the morning.

Ingredients

  • 1 3/4 C. all-purpose flour
  • 1/2 C. sugar -- plus 2 Tbs. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 C. walnuts, chopped
  • 1 tsp. lemon, rind of, grated
  • 1 large eggs
  • 1 C. milk
  • 4 Tbs. butter or margarine, melted
  • 1 tsp. vanilla
  • 1 1/2 C. blueberries

Directions

Preheat oven to 400 degrees. Grease a 12 cup muffin tin. In a large bowl, combine flour, sugar, baking powder, and salt. Stir in walnuts and lemon peel. In a small bowl beat egg, milk, butter and vanilla. Pour egg mixture into dry ingredients and stir just until flour is moistened (batter will be lumpy). Fold in blueberries. Spoon into muffin cups and bake 20 to 22 minutes or until tops are golden.

  • I would consider nuts an optional item; they do, however, add to the fat content as well as the cost of the muffins. I wouldn't worry about omitting them; the muffins are great without them. Love that lemon flavour with the berries!

  • Yummy! Love these muffins. Left our the walnuts, not my favorites! Otherwise, these came out perfectly each and every time. So easy to put together. Everyone here loves them as well as I do!
