  • 4 boneless chicken breasts, cut or pounded to ½ inch thick

  • ½ C. flour
  • 3 T. olive oil
  • 2 cloves garlic, minced
  • 1 C. chicken broth
  • ¼ C. lemon juice
  • 2 T. capers
  • ½ stick butter

Season chicken generously with salt and pepper. Dredge chicken in flour and transfer to your skillet. Pan-fry chicken for 3 to 5 minutes on each side until cooked through and set aside. Add your garlic to the pan and sauté for a minute until fragrant. Add chicken broth and lemon juice; stir and bring to a boil. Simmer until sauce slightly reduces, stir in capers and butter, and heat until butter has melted. Serve chicken with sauce.
