Lemon Chicken
Ingredients
- 1 package thin sliced chicken breasts
- 2 lemons, squeeze out juice to about 1/4 C.
- Breadcrumbs
- Parmesan cheese
- 1-2 eggs
- 1/4 C. butter
- 2 Tbs. olive oil
Directions
Dip chicken in eggs wash (eggs and water whisked). Dip chicken in breadcrumb and parmesan cheese mixture (1 C. breadcrumbs, 1/4 C. cheese). Set aside heat skillet with 1/4 C. butter and 2 Tbs. olive oil (you can add more if needed). Cook chicken until golden brown (about 8-10 minutes). Take chicken out of pan. Put lemon juice into pan with drippings and cook until boiled. Pour over chicken and enjoy! Chicken can go on bed of leaf spinach and the spinach takes on the lemon flavor.
