  • 4 Tbs. olive oil
  • 4 C. chicken breast, raw and cubed
  • 2 Tbs. garlic, chopped
  • 12 C. chicken broth
  • 2 C. white rice, uncooked
  • 1 Tbs. dried parsley
  • 1/2 tsp. dried sage
  • 4 eggs
  • 2/3 C. fresh lemon juice
  • Salt and pepper to taste

In a large saucepan, cook olive oil, chicken and garlic over medium heat for about 5 minutes. Add chicken broth. Bring to boil. Stir in rice, salt, pepper, parsley and sage. Cover. Reduce heat to low and cook for 45 minutes while stirring occasionally. Mix eggs and lemon juice in bowl. Scoop 1/4 of hot chicken rice in egg mixture. Pour slowly into soup. Cook for a few more minutes while stirring. If you desire, garnish with parsley.
