Ingredients

  • 1/2 tbsp extra virgin olive oil
  • 4 boneless chicken breasts
  • 1/2 tsp salt
  • 2 teaspoons all-purpose flour
  • 2 cloves garlic, crushed
  • 1/2 cup dry white wine
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon thyme, chopped
  • 1 cup pitted olives, chopped
  • 1 tbsp parsley, chopped

Directions

Preheat oven to 400F with the rack in the center position.
Heat olive oil in a cast iron skillet over medium-high heat. Add chicken with salt and season with pepper then sprinkle with flour. Sear the chicken for about 3 minutes on each side.
Remove pan from heat and transfer chicken to a baking dish. Add garlic, wine, lemon zest, lemon juice, thyme and olives to the backing dish. Top with lemon slices if desired and place dish to the oven and bake about 10-15 minutes.
Serve hot and top with parsley, salt and pepper.
