Lemon Chicken With Roasted Garlic
Serving Size / Yield
- 8 chicken thighs, skinless and boneless
- 1/3 C. lemon juice
- 1/4 C. olive oil
- 10 garlic cloves, peeled
- 1/2 C. chicken broth
- 1 Tbs. dried oregano
- Salt and pepper to taste
Preheat oven to 400 degrees F. Place the garlic in a roasting pan. Lay the chicken thighs over the garlic cloves. Mix remaining ingredients in bowl and then pour over chicken. Season well with salt and pepper to oven.
Roast while turning occasionally until the chicken is golden. Remove the chicken and garlic cloves from the pan. Serve the chicken garnished with lemon wedges.
