Lemon Coffee Cake

Add some zest to your regular coffee cake with lemon pudding – it'll keep it nice and moist too!

Ingredients

  • 1 18 1/2 oz. box yellow cake mix
  • 2 3 3/4 oz. boxes instant lemon pudding
  • 4 eggs
  • 1 8 oz. container sour cream
  • 1 C. vegetable oil
  • 3/4 C. hot water
  • 1 tsp. vanilla extract
  • 2/3 C. sugar
  • 3 tsp. cinnamon
  • 1 C. finely chopped pecans or dry oatmeal cereal

Grease Bundt or tube pan well. Set aside. Mix first 7 ingredients in a large mixing bowl in the order listed. Mix remaining ingredients in small mixing bowl for filling. Pour batter about 1 inch deep in cake pan. Sprinkle with some filling. Alternate batter and filling. Bake at 350 degrees for 60 minutes. Cool about 20 minutes in pan.

  • I tried this cake. It was good but the batter was very thick. I had trouble with the edges burning while it was cooking. It takes so long to cook.
