Lemon Coffee Cake
Ingredients
- 1 18 1/2 oz. box yellow cake mix
- 2 3 3/4 oz. boxes instant lemon pudding
- 4 eggs
- 1 8 oz. container sour cream
- 1 C. vegetable oil
- 3/4 C. hot water
- 1 tsp. vanilla extract
- 2/3 C. sugar
- 3 tsp. cinnamon
- 1 C. finely chopped pecans or dry oatmeal cereal
Directions
Grease Bundt or tube pan well. Set aside. Mix first 7 ingredients in a large mixing bowl in the order listed. Mix remaining ingredients in small mixing bowl for filling. Pour batter about 1 inch deep in cake pan. Sprinkle with some filling. Alternate batter and filling. Bake at 350 degrees for 60 minutes. Cool about 20 minutes in pan.
