  • 1 1/2 C. cornmeal
  • 1/2 tsp. salt
  • 2 Tbs. baking powder
  • 1 C. flour
  • 1 Tbs. sugar
  • 2 eggs, beaten
  • 2 tsp. lemon zest
  • 2 1/4 C. milk
  • 1/4 C. butter, melted
  • Powdered sugar

Preheat oven at 450 degrees. Mix dry ingredients in large bowl. Combine eggs, lemon zest, milk and butter with dry ingredients. Pour batter in 2/3 of each greased mini muffin tin. Bake for 15-20 minutes or until muffins are golden. When done, sprinkle with powdered sugar.
