  • 1 cup sugar
  • ½ teaspoon lemon extract
  • 3 teaspoons citric acid
  • ¼ cup corn syrup
  • 3-4 tablespoons water
  • 2-3 drops yellow food coloring

Make sure to prepare all your workstations—your saucepan, your candy mold, candy thermometer, a buttered spatula and a pan of coating sugar. Have everything measured out beforehand, since with sugar, you have to be quick!
Heat sugar, corn syrup, and water in a saucepan. Bring to a soft boil, stirring constantly.
Place the thermometer into the saucepan. Don’t stir anymore, waiting for it to reach 310F, then remove from heat.
Allow the saucepan to sit for 30 seconds to a minute before adding the food color, lemon extract, and citric acid, completely combining.
Pour into the molds and let cool for at least 5 minutes.
Dust with powdered sugar, then enjoy!
