These lemon garlic chicken drumsticks don't take too much effort to make. Everything is cooked in one skillet!

  • 1 lb. chicken drumsticks
  • 1 Tbs. olive oil
  • 4 Tbs. butter
  • 1 clove garlic, minced
  • 2 lemons, cut into halves and juiced
  • 1 yellow onion, chopped
  • 1/2 lb. red bell pepper, quartered
  • Salt and pepper to taste

Season the drumsticks with salt and pepper to taste. Heat olive oil in a extra large skillet over medium-high heat. Add 2 Tbs. butter. Brown drumsticks slowly on each side slowly and then transfer to a plate. Lower heat to medium low. Add all the drumsticks back to the skillet. Cover and cook for 20 to 25 minutes. Remove the lid and add remaining butter, garlic, lemons, onions and red bell peppers. Toss to coat drumsticks. Turn off heat and let chicken rest for a few minutes. Serve warm.
