  • 1 1/2 lb. carrots, peeled and sliced to preferred shape and size
  • 3 T. butter
  • 3 T. brown sugar
  • 3 T. fresh lemon juice
  • 1/4 tsp. salt

In a large skillet, place carrots in about one inch of water. Bring to a boil over medium-high heat. Reduce to medium-low heat, cover, and let simmer for 10 minutes. In a small saucepan, melt butter. Whisk in brown sugar, lemon juice, and salt. Bring mixture to a boil, making sure to stir constantly. Drain your carrots and combine with butter mixture. Gently toss to combine. Transfer to a serving dish and enjoy immediately.
