These delicious mussels are cooked with a crockpot. With a few ingredients you can have a fabulous appetizer.

Ingredients

  • 2 tbsp olive oil
  • 4 shallots, chopped
  • 2 garlic cloves, chopped $
  • 3 (3-inch) sticks lemon grass
  • 1/2 tsp ground ginger
  • 3 C water
  • 1/4 C chopped fresh cilantro, divide
  • 1/4 C dry white wine
  • 1 tsp sea salt
  • 1/4 tsp fresh ground pepper
  • 35-40 farmed mussels, scrubbed and debreaded
  • 1/4 C heavy whipping cream
  • 1 tbsp fresh lemon juice
  • 4 green onions, sliced diagonally

Directions

Add everything, but the mussels to the crockpot and simmer on low heat for 2 hours.  Then add the srubbed and debreaded mussels to the crockpot and leave on high.  Cook the mussels for about 45 minutes or until they open.
