Lemon Knot Cookies

Ingredients
- 1 1/2 C. sugar
- 7 eggs
- 1 C. solid vegetable shortening
- 5 C. flour
- 5 tsp. baking powder
- 1 tsp. lemon extract
- Frosting:
- 3 C. powdered sugar
- milk
- lemon juice
- yellow food coloring
Directions
Preheat oven to 350 degrees. Cream together sugar, eggs, and shortening. Add flour, baking powder, and lemon extract. Mix well. Chill. This dough will stay soft. On a lightly floured surface, roll a portion of the dough into a coil 1/2-inch in diameter by 5 inches long. Overlap the ends of the dough into a loop on a parchment paper lined baking sheet. Repeat process until all dough has been used. Bake 10-12 minutes until lightly browned around the edges. Cool completely on a rack.
For frosting: Mix powdered sugar with enough milk and lemon juice until smooth and fairly thin. Add as much food coloring as needed. Frost cookies.
