  • 1 stick unsalted butter
  • grated zest 1 lemon
  • 2 Tbs. lemon juice
  • salt
  • pepper
  • 1 lb. linguine
  • 3/4 C. grated parmesan cheese

In a large skillet, melt butter over medium heat. Remove from heat and stir in the lemon zest and juice, pinch of salt and pepper to taste. Bring 4 qts. of water to a boil in a large pot. Add 2 Tbs. salt, then pasta. Make sure the pasta is completely covered with water. Stir well. Cook over high heat until pasta is al dente. Drain pasta, then add it to the sauce and toss well. Add cheese and toss again. Serve.
