  • 8 cups chicken stock
  • 2 chicken breasts
  • 3 ½ minced garlic cloves
  • ½ diced onion
  • 2 tablespoons rosemary
  • 4 diced celery stalks
  • 2 bay leaves
  • 1 pound sliced carrots
  • ½ diced onion
  • 1 cup orzo pasta
  • 2 tablespoons lemon juice
  • zest of 1 lemon
  • 2 tablespoons thyme leaves
  • Salt and pepper

Directions

Add the first 9 ingredients to the slow cooker and cook on medium for 6-7 hours. Remove the chicken breasts and add the pasta. Cook for 25 minutes on high heat. Meanwhile, dice the chicken breasts. Then add the lemon zest, lemon juice, diced chicken, and thyme to the pot. Season with salt and pepper, stir, and serve.
