You don't have to waste money on takeout tonight. With an already simplified pad thai recipe handy, we added a little more lemon to create richer flavors.

  • 1 pkg. pad thai noodles
  • 2 Tbs. vegetable oil
  • 2 eggs, beaten
  • 1 C. green prawns, shelled
  • 1 tsp. lemon zest
  • 1/8 tsp. red pepper flakes
  • 1/2 C. roasted peanuts, chopped
  • 1 C. fresh bean sprouts, trimmed
  • 1/2 C. fresh shallots, trimmed and cut into small pieces
  • 1 lemon, sliced

Cook noodles according to package directions. Heat oil in skillet. Pour in eggs and cook until set. Place cooked eggs aside. Add prawns and stir fry until cooked through. Remove and set aside. Add drained noodles to skillet. Mix with lemon zest and red pepper flakes. Stir fry with noodles until heated through. Add prawns and toss together. Cut omelette into 1" pieces. Mix all ingredients including peanuts, sprouts and shallots together in bowl before serving. Garnish with lemon slices.
