  • 8 chicken thighs
  • 1 T. smoked paprika
  • Salt and pepper to taste
  • 3 T. butter
  • 4 cloves garlic, minced
  • 1 C. chicken broth
  • ½ C. heavy creamy
  • ¼ C. grated Parmesan
  • Juice of 1 lemon
  • 1 tsp. dried thyme
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped

Preheat oven to 400 degrees. Season chicken generously with paprika, salt, and pepper. In a skillet, melt butter and sear both sides on chicken until golden brown; drain and set aside. In the skillet, sauté garlic until fragrant and add in broth, cream, Parmesan, lemon juice, and thyme. Simmer for 5 minutes, pour over chicken in a greased baking dish, add in bell peppers, and bake for 30 minutes until tender.
