Lemon Pepper Salmon With Spinach And Tomatoes

- 4 salmon fillets
- Lemon pepper salt, to taste
- Pepper, to taste
- Olive oil, for cooking
- 1 bag russet potatoes, halved
- Salt, to taste
- 1 bag fresh spinach
- 1 C cherry tomatoes, halved
Season salmon with lemon pepper salt and pepper.
Heat up olive oil on a pan. Grill salmon until desired doneness is reached.
In another pan, heat up olive oil. Cut russet potatoes in half and season with salt and pepper.
Cook until golden brown, 10 to 15 minutes.
Serve salmon on a bed of spinach and cherry tomatoes with potatoes as a side.
