  • 12 ounces salmon fillets
  • 1 tablespoon lemon juice
  • 1 cup basil leaf
  • 2 minced garlic cloves
  • ¼ cup olive oil
  • ¼ cup grated parmesan cheese
  • ¼ cup pine nuts

Toast the pine nuts in a skillet over medium heat and then transfer the nuts to a food processor. Add the basil and garlic and pulse to combine all three ingredients. Drizzle in olive oil and process. Next, add the cheese and lemon juice and process to combine. Season the salmon with salt and pepper and cook the fish in a skillet sprayed with cooking spray. Cook for 4 minutes on each side over medium-high heat. Spoon the pesto over the salmon fillets and serve.
