  • 1 1/2 Tbs. olive oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 skinless, boneless chicken breast
  • 1 1/2 C chicken broth
  • 1/3 C fresh lemon juice
  • 1 rosemary sprig

Preheat oven to 375 degrees.

Season chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper.

Heat oil in a skillet. Add chicken and cook for 3 minutes on each side.

Place chicken on a sheet pan and bake for 25 minutes. Remove from oven and let cool for 15 minutes.

Add broth, lemon juice and rosemary sprig to skillet. Bring to a boil, reduce heat and simmer for 20 minutes. Discard rosemary sprig and stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

Serve sauce with chicken.
