This has to be one of our favorite recipes that can be enjoyed all year round. Make these chicken kabobs for dinner and bring them into work the next day. The chicken will still be juicy and flavorful.

  • 8 bamboo skewers
  • 2 lb. boneless, skinless chicken breasts, cut into 2-inch pieces
  • 3 Tbs. olive oil, divided
  • 2 Tbs. minced fresh rosemary
  • Lemon juice, as needed
  • Salt, to taste
  • Pepper, to taste

In a bowl, combine chicken, olive oil, rosemary and salt and pepper. Toss to coat.

Coat grill pan or grill with one tablespoon olive oil. Slide chicken pieces onto skewers. Cook skewers for about 15 minutes, or until cooked through. When finished, coat chicken with desired amount of lemon juice.
