  • 1 C. butter (soft)
  • 3/4 C. light brown sugar
  • 2 tsp. lemon juice
  • lemon zest
  • 2 C. flour

Preheat oven to 325 degrees
In large bowl, cream butter and sugar with an electric mixer
Add lemon juice, zest, and flour
Mix on low speed
Flatten tablespoons of dough onto an ungreased cookie sheet (Beware that cookies will spread in the oven)
Bake 15 to 20 minutes until cookies are golden
Cooled cookies may be frosted with lemon icing if desired
