  • 1 bundle of spinach
  • 1 Tbs. fried shallots
  • 3 cloves garlic, peeled and sliced thinly
  • salt
  • oil
  • 2 Tbs. lemon juice

Wash, dry, and cut off the bottom part of the stem of the spinach and set it aside. In a pan, drizzle some oil and toss in the garlic and shallots and cook for a few minutes. Sprinkle with salt. Before the garlic burns, put the spinach in the pan. As it starts to wilt, add the lemon juice a pinch of salt. Stir to mix and cook for about 2 more minutes.
