This delicious lemon-thyme cake is sweet with a little bit of spice from the thyme. The flavors all work really well together and can be manipulated. You can try adding a couple dashes of lavender extract versus the thyme if you want a sweeter dessert.

  • 1 box yellow cake mix
  • ½ C. butter, melted
  • 2 eggs
  • 2 tsp. lemon extract
  • 1 lemon, zested and juiced
  • ½ tsp. dried thyme
  • Confectioner’s sugar

Preheat the oven to 325 degrees. Combine all of the ingredients and pour the batter into a greased medium sized skillet. Bake the dish for 25 minutes until golden. Dust the top with confectioner’s sugar and garnish with thyme, lemon slices, and a squeeze of lemon.
