  • 1 1/2 C. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 C. Greek yogurt
  • 1 C. sugar
  • 3 eggs
  • 1 tsp. lemon juice
  • 1 tsp. vanilla
  • 1/2 C. vegetable oil

Preheat oven to 350 degrees F. Spray round cake pan with cooking spray and dust with flour. In a medium bowl, mix flour, baking powder and salt. In a large bowl, combine yogurt with sugar. Add eggs slowly and then stir in remaining ingredients. Add flour mixture to yogurt mix. Stir well. Pour in cake pan. Bake for 45 to 50 minutes.
