  • ¼ cup vegetable oil
  • ¼ cup oyster sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 2 tablespoons chile sauce
  • 2 pounds boneless pork shoulder
  • 1 ½ cups julienned carrot
  • ¼ cup distilled white vinegar
  • 3 tablespoons lime juice
  • 1 minced jalapeno
  • 8 ounces rice vermicelli
  • 2 tablespoons Asian fish sauce
  • ¼ cup white sugar
  • 2 tablespoons sugar
  • 1 minced lemongrass stalk
  • ¼ teaspoon baking soda
  • 4 minced garlic cloves
  • Salt and pepper

Whisk together the oyster sauce, vegetable oil, lemongrass, honey, brown sugar, baking soda, garlic cloves, and chile sauce. Add 1 teaspoon of salt and pepper. Slice the pork and add it to the marinade. Turn to coat and refrigerate for 2 hours. In another bowl, toss the carrot with ¼ cup white sugar ¼ cup water. Let stand for 30 minutes. Meanwhile, stir ¼ cup water with the lime juice, fish sauce, jalapeno, and 2 tablespoons sugar. Cook the vermicelli in a large pot until al dente and then drain. Remove the pork from the fridge and grill over high heat for 4-5 minutes. Distribute the noodles into bowls and top with pork and pickled carrots.
