Lentil and Brown Rice Casserole
- 3/4 C. dried lentils (6 oz.), sorted, rinsed
- 1/2 C. uncooked brown rice
- 2 1/2 C. vegetable broth
- 1 1-lb. bag frozen cut green beans or broccoli cuts
- 1 C. shredded Cheddar cheese (4 oz.)
Heat oven to 375 degrees. In 2-quart casserole, mix lentils, rice and broth. Cover; bake for 1 hour. Stir in frozen green beans. Bake covered about 30 minutes or until liquid is absorbed and rice is tender. Sprinkle with cheese before serving.
