Lentil and Brown Rice Casserole

The green beans are added frozen halfway through cooking to help keep their bright green color and texture!

  • 3/4 C. dried lentils (6 oz.), sorted, rinsed
  • 1/2 C. uncooked brown rice
  • 2 1/2 C. vegetable broth
  • 1 1-lb. bag frozen cut green beans or broccoli cuts
  • 1 C. shredded Cheddar cheese (4 oz.)

Heat oven to 375 degrees. In 2-quart casserole, mix lentils, rice and broth. Cover; bake for 1 hour. Stir in frozen green beans. Bake covered about 30 minutes or until liquid is absorbed and rice is tender. Sprinkle with cheese before serving.
