Lentil Sausage Stew

Ingredients
- 2 oz. pancetta, chopped
- 1 med. onion, chopped
- 1 celery rib, chopped
- 1 carrot, chopped
- 6 fresh sage leaves
- pinch crushed red pepper
- 2 Tbs. olive oil
- 2 C. lentils, rinsed and drained
- 1 C. chopped tomatoes
- salt
- 1 lb. Italian-style pork sausage, casings removed
Directions
In a large pot, cook pancetta, onion, celery, carrot, sage and red pepper with the oil over medium heat. After about 15 minutes, stir in lentils, tomatoes and 1 tsp. salt. Add cold water so that the ingredients are covered by 1 inch. Bring to a simmer and simmer for 45 minutes. Meanwhile, chop sausage and place it in a medium skillet. Cook over medium heat, stirring occasionally, for about 10 minutes. When lentils are almost tender, stir in sausage and cook for 15 more minutes. Serve.
