Lentil Soup
Ingredients
- 1 pkg. brown lentils
- 1 C. chopped leeks
- 3/4 C. chopped onion
- 1/2 C. chopped carrot
- 3/4 C. chopped green pepper
- 3/4 C. chopped tomatoes
- 3 Tbs. butter
- 3 Tbs. flour
- 2 tsp. salt
- 2 Tbs. vinegar
Directions
Place package of lentils into 5 cups cold water. Bring to a boil and simmer for 1 hour, covered. All the water will be absorbed. Chop vegetables while lentils are cooking. Saute vegetables for 5 minutes in a lightly oiled skillet. When lentils are finished cooking add vegetables.In a skillet, melt 3 Tablespoons butter and add 3 Tablespoon of flour. Cook until smooth and add 3 cups of water----using a whisk stir till smooth and slightly thick and add 2 Tablespoons of vinegar. Add to lentils, Simmer for and additional 30 minutes.
