6-8 servings

Ingredients

  • 1/2 lb. lentils, washed
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2 garlic cloves
  • water, as needed
  • 4 Tbs. oil
  • salt
  • pepper
  • parsley, chopped
  • 1 bay leaf
  • oregano

Directions

Clean and rinse lentils. Simmer onions and garlic in oil. Add all of the remaining ingredients. Cover with water and simmer for 1 1/2-2 hours or until lentils are tender.
